Happy Easter
The mini mice that lives in the dollhouse by the currant bush have been busy
making all kind of treats for Easter. Today a fresh smell of hot cross buns
fills the kitchen. Some of the mice have been ice skating on the lake. Cocoa and hot cross buns filled with raisins and cocktail berries awaits the tired mice.
The glaze on top is made with almond extract. A very special Easter treat for
the mice.

Brownies
I promise, you are in for a treat this time. "Theminimice" have done it again. The search for the best brownie recipe should be over after trying this one. Absolutely a winner. Saintpaulia whips this up in no time. The whole colony gets excited when the chocolate fragrance fills the garden. Now here take a look at the step by step and pictures of the mini version. 1 cup butter
3 cups sugar
4 eggs
1 TBS vanilla extract
1 1/2 cups all-purpose flour
3/4 cup cocoa
3/4 tsp. salt
1 cup semisweet chocolate chips, or chopped chocolate.
Preheat oven to 350 F
Melt the butter in a pan, put in the sugar and take it off the heat. Stir the eggs into the mixture. One at a time. Add the vanilla. In a separate bowl whisk together flour, cocoa, salt and chocolate chips. Add this dry mix to the wet mix and do not overwork, just mix it together so it is smooth. Spread mixture into a parchment covered 9 x 13 inch pan. Bake for 35 minutes. Allow to cool before cutting.

Key lime pie

“Theminimice” would like to show you a great recipe for a pie they often make.
This pie is so easy to make and it tastes great. May not be authentic due to that there is no eggs in the filling and no key limes. But feel free to use them. Normal limes are so much more easy to get hold of. Hope you try this pie out. Perfectly balance of sweet and tart.
Here is the recipe:
Crust
1/4 cup sugar
10 digestive crackers
5 tbs melted butter
Mix in food processor and press into an 8 or 9 inch pan.
Put in oven for 5 minutes on 320 F to firm.
Chill a bit while making the filling.
Filling
2 cans of sweetened condensed milk
1 TBS of lime zest
3/4 cups of fresh lime juice (about 4-5 limes normal limes)
1/2 cup of sour cream (light is fine)
Mix well, but do not whisk it hard, just combine.
Put in oven for about 15 minutes at 350 F
Take out of oven and let it come to room temperature before chilling in fridge. Chill about one hour before serving or make a day ahead.
Serve with light whipped cream with a bit of icing sugar. Thin slices of lime also looks very festive.
